Bliss Balls

These are amazing, on-the-go energy bites that you can prep well in advance and keep in the fridge. They taste JUST like chocolate truffles… and are super customisable so you can mix up the combo of fruits and nuts to your preferences.

Makes about 40 small bliss balls

Special equipment needed: food processor

350g dry ingredients:

  • 100g rolled oats

  • 100g nuts and seeds (raw or roasted, your choice - a combination of almonds, cashews, peanuts, pepitas, sunflower seeds. Anything goes) — I use 50g almonds, 50g pepitas

  • 50g shredded coconut

  • 50g cocoa (cacao powder or baking cocoa will do!)

  • 30g almond meal

  • 20g chia seeds

  • Pinch of salt

300g dried fruit (your choice of anything you have), e.g.:

  • 100g dates, pitted

  • 50g sultanas

  • 50g apricots

  • 50g cranberries

150g nut butter (peanut, almond, cashew, macadamia)

100g golden syrup, honey or maple syrup

30g oil (melted coconut oil or other neutral oil of choice)

Extra shredded or dessicated coconut, for rolling (optional)

METHOD

  1. Place all the dry ingredients in a food processor and blitz until finely chopped.

  2. Add the dried fruit and continue to blitz until it starts to come together (it will still be dry!). Pour into a large bowl.

  3. Add the nut butter, golden syrup, oil and salt, into the fruit and nut mixture and mix well with your hands until it all comes together.

  4. Use your hands to roll mix into teaspoon sized balls, squeezing so the mix comes together. Roll in coconut if desired. Place into fridge to chill for at least 1 hour til firm.

Keeps well in the fridge for up to 1 month.
